Blini (crepes)
Blini are traditional thin Russian pancakes, and can be made with buckwheat or regular flour. Popular toppings for these little guys include sour cream and caviar (shown here), yogurt and jam, or plain with a knob of butter. My mom would also always layer butter between the pancakes and cover them with a towel, letting them become steamy, buttery, and tender.
And don’t forget: ПЕРВЫЙ БЛИН КОМОМ! This literally means “the first pancake is always a lumpy one” and reminds us not to expect the first attempt at something to be successful.
Pirozhki (hand pies)
Pirozhki are little baked or fried hand pies, and are a common cultural street food and comfort food. Fillings include cabbage, ground meat, mashed potato, egg, apricot, apple, and cherry (shown here).
If you’re ever in Russia, be sure to pick one of these up from your local bakery or your Babushka’s house!
